I was checking Hyperdia.com/en to check if I could get from the airport to our hotel by train. Do you always have to go to Shin-Osaka first and then on to Nakatsu? It looks like the Osaka Station is closer to Nakatsu, but to get to Nakatsu you have to go to Shin-Osaka. Is this the case? Also will the JR Pass get me there?

For the Ramada hotel I think I'd aim for Osaka station as my target from Kansai Airport, which you can get to direct using a JR Pass using the Airport Rapid service.
Here is the location of your hotel in relation to Osaka station:
Your hotel is a 1.2km, or 15mins walk from Osaka station. You could also board the Umeda subway from here and travel the one stop to Nakatsu on the red line (approx ¥200), or hop in a taxi for under ¥1000.
