Does a 7-day pass imply that I have seven "consecutive" days to use it? For example, if there's one day during that week (7 days essentially) that I won't use a train will I lose a day on that 7-day pass? Or, does a 7-day pass mean I could use it for seven "non-consecutive" days if I'm staying there for two weeks? Please confirm.

Yes, a 7-day JR Pass is valid for seven consecutive days of use. This means that once you activate the pass, it is valid for seven days in a row, and you cannot "skip" days or use them non-consecutively.
