I was wondering if I buy my RailPass from when it's valid on? Can I decide on a specific day?
Can I split the seven days into seven travel days? Or is it valid in seven consecutive days?
Also I was wondering:
Does it make a huge difference wether you go to tokyo- kyoto - osaka - hakone - tokyo or is it better to go tokyo - osaka - kyoto - hakone - tokyo?
One full day is sufficient in osaka i guess?

Yes, you can select your own starting date when you activate the JR Pass in Japan, from there on it's a 7-day consecutive period.
A 7-day JR Pass is cost efficient for: tokyo- kyoto - osaka - hakone - tokyo. The route does not matter whether you do Kyoto or Osaka first, as its basically one line that you are travelling on.
For Osaka, it completely depends what you want to do there. I know some people of love Osaka and want to stay there for a long time while others have seen enough in a single day. You should be able to at least get a nice impression and see several highlights in one day.
