Date of Birth on JRPass site

That's a good questions :)

We only use your DoB to verify if you qualify for a child ticket. There's no other reason it's there and not used for anything else.

So Feel free to use a different date.

Hope your mom will have a good time going around Japan, and thank you for using the JR Pass.
