Hello,
I would like to find out the best way to do these three journeys.
I would like to also find out where I can buy tickets for Nozomi trains if they are quicker and help complete the journey faster.

Hi there,
For travel times, I recommend learning to plan with Hyperdia this way you can find any route/timetable and more. It's a great tool for planning with the JR Pass. We also have a useful interactive map with all JR lines included.
Train tickets (without a JR Pass) can be bought at any train station in Japan.
Kind regards,
Daniel
