Hi there,
For Fukuoka you should head for Hakata station (for historical reasons, Fukuoka's bullet train terminal is called Hakata). Here is a sample itinerary.
Please note that the very latest you should leave Tokyo for Hakata is the 17:33 train arriving into Hakata at 23:52 (379 mins).
