Hi Rene,
You can use every Shinkansen line using the JR Pass, but when it comes to trainservices there's one important rule to know and that there is an extra fee for Nozomi and Mizuho serivices. All other types are included.
For reference see: Nozomi Ticket, and the Nozomi Shinkansen.
When you book your seat reservations, you will also be booked in the free eligible trains, so in that sense you never have to worry about it.
