Generally, the Shinkansen have plenty of space. While there is no English website to check seat availability, you can be assured of seats.

For travel times, I recommend learning to plan with Hyperdia this way you can find any route/timetable and more. It's a great tool for planning with the JR Pass. We also have a useful interactive map with all JR lines included.

Just open Hyperdia in your browser, it is always free. Alternatively, there is a nice app called Navi, you download that too.
